The same old roast turkey with a yummy stuffing, mashed potatoes and gravy, a vegetable (corn is the most accepted choice though there are other options like green bean casserole and mushroom), cranberry sauce, bread or biscuits and the perfect dessert which is usually pumpkin pie, apple pie or cherry pie. Though, the menu is all set and ready, how many of us are really prepared for the cooking? If there are dishes which can be prepared two or three days before Thanksgiving, like cranberry or orange relish and stuffings like pork or apple stuffing. Properly cover these dishes and refrigerate them.
If you are planning to use a frozen turkey, it is recommended that you remove it from the freezer 3 days before the main day, unwrap it and place it on a suitable platter or tray. Then cover the bird completely in cling wrap and place it in the lowest shelf of the refrigerator.
It is recommended that if you are planning to brine the turkey do it the previous day itself and refrigerate it.
Before roasting the turkey, that is about an hour before that, take the turkey out of the brine and rinse it with cold water. Use your kitchen towel to dry it. Leave it in a cool place so that it will reach the room temperature. This will help in the easy penetration of heat when placed in the oven and thus helps in cook through safely and more evenly.
To prevent the discoloration of potatoes it is recommended that you put all the potatoes in cold water just after you peel them.
Whatever be the preparations, you almost always forget most of these things. But don't worry, you can always cheat. There are some easy ways to make up for your last minute preparations.
